== Flowering, fruiting, and harvest == Flowering and fruiting differ among cultivars. A Southwestern United States study observed 56 jujube cultivars for flowering habits and fruiting characteristics and identified morning- and afternoon-flowering classes; detailed flowering dates and cultivar-level values are not generalized here.<sup id="cite_ref-7">[[#cite_note-7|[7]]]</sup> Plan for cultivar-specific variation rather than assuming that every tree flowers or ripens on the same schedule. Pollen performance also varies under laboratory conditions. An in-vitro study of ten Iranian cultivars reported differences in germination timing, hourly germination, velocity and pollen-tube length, but those measurements do not establish field pollination compatibility or a guaranteed fruit set.<sup id="cite_ref-8">[[#cite_note-8|[8]]]</sup> Harvest as fruit changes from green toward its mature brown-red stage and reaches the texture and flavor intended for the use. The NMSU production guide covers maturation and harvest, including cultivar differences; fruit may be eaten fresh or dried.<sup>[[#cite_note-2|[2]]]</sup> Handle fruit gently once fully colored because bruising reduces fresh-market quality.
